If I join another persons online game, will it delete my hosted game save?

The saves are only hosted on one console, so if you join another player’s game and save, you’ll only be updating the save on the hosts console. You can then leave the game and then resume your own multiplayer save on your own console at any time.
Also, in case you weren’t aware, you can have 1 single player and 1 multiplayer game per save slot too. They share the same world map, but the single player will update the cartographer. You can also see days survived in Single Player from the main menu, and days survived in Multiplayer in the Multiplayer pause menu.
